- It’s simple! In fact, it’s easy enough to prepare that your kids can help out. Although a hand mixer is recommended if you plan to frost them, this recipe doesn’t require any special equipment and calls for mainly pantry staples. And while it does take nearly an hour to make ready, all but ten minutes of that is hands-off.
- You can top them with frosting….or not! While I recommend preparing these blondies with frosting, you most certainly don’t have to. It’s a cream cheese frosting and it calls for a quarter less powdered sugar than most recipes so it’s not overly sweet. The slight tang of the cream cheese pairs nicely with the tart berries that are enveloped within the rich buttery blondies.
- It’s great for summer! In the US, blueberries are in season from early June through August making this crowd-pleasing dessert perfect for summer cookouts, barbecues, and potlucks.
Ingredients (+ notes & substitutions)
- Eggs: To prevent the butter from firming, the eggs should be room temperature. To quickly warm them, place them in a bowl of hot, but not boiling, tap water for ten minutes.
- Granulated sugar: For structure.
- Light brown sugar: Brown sugar contains more molasses than granulated sugar. Because of this, it is more richly flavored and keeps baked goods moister. Since this is a summery dessert, I opted for light brown sugar to keep it a bit lighter, but you could certainly use dark brown sugar.
- Vanilla extract: For the blondies and for the cream cheese frosting.
- Unsalted butter: The butter for the blondies should be melted and cooled and for the frosting, it should be softened to room temperature. If you wish, you can sub for vegetable oil.
- All-purpose flour
- Kosher salt: Adding a smidge of salt makes the other flavors pop by providing contrast.
- Fresh blueberries: Make sure to rinse and dry them first. See the FAQ section below for instructions on substituting for frozen berries.
- Cream cheese: It will need to be softened to room temperature first.
- Powdered sugar: For the cream cheese frosting.
How to make frosted blueberry blondies (+ tips)
1. Preheat your oven to 350 degrees. For easy cleanup, line an 8×8-inch baking dish with parchment paper or liberally grease it with non-stick cooking spray and set it aside. Using parchment paper is ideal because it allows you to lift the blondies out of the baking dish.
2. In a medium bowl, whisk the eggs then add the granulated sugar, light brown sugar, and vanilla and mix until fully combined.
3. Add the butter and whisk until well combined.
4. Add the all-purpose flour and salt and mix until just combined, then gently fold in the blueberries.
5. Transfer the batter to the prepared baking dish and bake for approximately 35-40 minutes until the edges begin to brown and a toothpick inserted into the middle comes out clean. Transfer to a wire cooling rack and allow to cool.
6. For frosted blondies, prepare the cream cheese frosting while they are cooling. Use a hand mixer to beat the butter and cream cheese until smooth and fully combined. Add the powdered sugar and vanilla extract and beat until fully combined.
7. Once cool, spread the cream cheese frosting evenly atop the blondies, then slice and serve.
Storage
Frosted blondies should be refrigerated in an airtight container. They will keep for up to one week. P.S. They taste really good cold!
FAQ
These dessert bars are the sibling of brownies. Unlike brownies, however, they contain no cocoa powder. Other differences include the addition of vanilla and the use of brown sugar rather than granulated sugar. Although some brownie recipes do include both of these ingredients, it’s not the standard.
Although I recommend them, I realize that fresh blueberries are not always an option due to availability or price. The wonderful news is that you CAN replace fresh blueberries with frozen ones. Just make sure you thoroughly thaw them then dry them using paper towels or a clean kitchen towel first.

- 2 tablespoons unsalted butter, softened to room temp
- 2 ounces cream cheese, softened to room temp
- 3/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
