What’s to love about this recipe?

  • The summery flavors! Blueberries and lemon just scream summer. They’re both irresistibly refreshing and help balance the warming spices and heaviness of these fritters. Blueberries also happen to be in season this time of year.
  • The ease! No need to head to the bakery for fritters when they can be made at home with ease – especially if you own a deep-fat fryer. From start to finish, they take less than 25-minutes. The recipe calls for pretty standard ingredients, which minus the blueberries, you most likely already have on hand. These easy blueberry fitters don’t demand any special skills so even a novice cook can successfully prepare them.
  • The versatility of the fritters! Since they are a bit on the sweet side, berry fritters can be served as a dessert in addition to breakfast or brunch. Don’t count them out as a snack either!

Ingredients (+ notes & substitutions)

Ingredients for blueberry fritters with vanilla lemon glaze (see recipe card).
  • Neutral oil: Vegetable or canola oil are best for deep-frying.
  • All-purpose flour
  • Brown sugar: Granulated sugar would also work.
  • Baking powder: For leavening.
  • Ground cinnamon: This warming spice, which pairs wonderfully with blueberries, adds an extra pop of flavor.
  • Ground nutmeg: Another warm and comforting spice that goes well with blueberries.
  • Whole milk: For the berry fritters and the glaze.
  • Large eggs: The eggs should be room temp. To quickly warm them, place them in a bowl of hot (not boiling) tap water for ten minutes.
  • Vanilla extract: For both the fritters and the vanilla lemon glaze.
  • Blueberries: For this recipe, I advise that you use fresh blueberries.
  • Powdered sugar: For the glaze.
  • Lemon juice: Fresh or bottled will work.
