- Neutral oil: Vegetable or canola oil are best for deep-frying.

- Brown sugar: Granulated sugar would also work.
- Baking powder: For leavening.
- Ground cinnamon: This warming spice, which pairs wonderfully with blueberries, adds an extra pop of flavor.
- Ground nutmeg: Another warm and comforting spice that goes well with blueberries.
- Whole milk: For the berry fritters and the glaze.
- Large eggs: The eggs should be room temp. To quickly warm them, place them in a bowl of hot (not boiling) tap water for ten minutes.
- Vanilla extract: For both the fritters and the vanilla lemon glaze.
- Blueberries: For this recipe, I advise that you use fresh blueberries.
- Powdered sugar: For the glaze.

How to make blueberry fritters with vanilla lemon glaze (+ tips)
1. Preheat your deep fat fryer or heavy-bottomed pot with oil at least 2-3 inches deep to 360 degrees.
2. Add the flour, brown sugar, baking powder, cinnamon, and nutmeg to a medium bowl and whisk to combine.

3. In a liquid measuring cup or a small bowl, whisk together the milk, eggs, and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and mix until just combined.

Then stir in the blueberries.

5. In batches of 3-4, scoop the 1/4 cup of the batter into the hot oil. Fry for 1-2 minutes then flip and fry another 1-2 minutes until brown and crispy. Using a metal slotted spoon or tongs, transfer the fritters to a wire cooling rack atop a sheet pan and allow them to cool while you prepare the glaze. *** Be sure to allow the oil temp to rise back to temp in between batches.

6. In a medium bowl, whisk together the ingredients for the vanilla lemon glaze until fully combined and smooth then set aside.

7. Dunk the fritters in the glaze to coat then transfer them back to the wire cooling rack. You can serve the fritters immediately or allow them to rest so that the glaze may set prior to serving, approximately 20 minutes.

Fritters are best enjoyed fresh, however, may be stored in an airtight container at room temperature for one day or refrigerated for up to three days.
