- It’s simple! Although there are a couple of components, these burgers are not difficult to throw together, especially if you have some experience cooking burgers. They take about 30-minutes to prepare and aside from a grill or grill pan, require no special kitchen equipment. The clean-up is quick and easy too!
- You can prepare it indoors or outdoors! These burgers can be cooked on a grill when weather permits and when it doesn’t, you can cook them up on a grill pan or skillet. Regardless of which method you use, they will be delish!
- It’s delicious! Just like my bacon hatch chile burger and my mushroom and Swiss burger, this restaurant-worthy burger is mouthwateringly tasty. The perfectly seasoned burger patties are topped with melted pepper Jack cheese, juicy sliced tomato, crispy bacon, mashed avocado, and a bit of onion for zing and then smashed between a toasted brioche bun. Mmmmmm.

Ingredients (+ notes & substitutions)

- Bacon: I highly recommend thick-cut bacon, because it’s so much meatier. Regular bacon will suffice, however.
- Ground beef: My suggestion is 80/20 ground beef. You want a little bit of fat so your burgers are nice and juicy.
- Worcestershire sauce: For that umami flavor.
- Garlic powder
- Kosher salt
- Onion powder
- Ground black pepper
- Avocados: You’ll need two large avocados or 3-4 small avocados.
- Pepper Jack cheese: Feel free to sub for cheddar or another type of meltable, sliced cheese.
- Brioche buns: While brioche buns are my preference, any buns will do.
- Sliced tomato: A slice of tomato to bring balance and freshen things up
- Sliced onions: Personally, I can’t eat a burger without onions. If you’re not a fan, you are more than welcome to omit them. White or red work best.
How to make bacon avocado burgers (+ tips)
1. Preheat your oven to 400 degrees. Arrange the bacon in a single layer on a wire cooling rack atop a baking sheet or if you don’t have one, directly on a baking sheet. Using a wire cooling rack helps prevents the bacon from soaking in its own fat which helps it crisp up. Bake for 20 to 25-minutes until browned and crispy. ****If you’re using regular bacon as opposed to thick-cut, it should only take about 15-20 minutes.

2. Meanwhile, use your hands to combine the ground beef, Worcestershire sauce, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, 1/2 teaspoon onion powder, and 1/4 teaspoon black pepper. Then, divide the mixture into four equal portions and form patties approximately 4-inches in diameter. Press down the center of each patty using your thumb to create an indentation. Doing so will help keep the patties flat while cooking.

3. Next, mash the avocado in a bowl using a manual food chopper or a fork. Add 1/4 teaspoon of garlic powder, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of black pepper and stir to combine. Set aside.

4. Heat your grill or a grill pan on the stove to medium-high heat (375-450 degrees). Place the burgers on the grill/grill pan and cook for three minutes then flip and cook another 3-5 minutes based on your desired level of doneness. (See the FAQ section below for more information on how to tell when a burger is done). When there is about one minute left, place a slice of cheese atop each burger patty. Transfer the burgers to a plate.

5. Place the bun halves cut side down on the grill or grill pan and cook for 30 seconds to a minute until there are grill marks. If you are using an outdoor grill, you should brush the buns with butter or oil first. If using a grill pan the fat from the ground beef is all you need.

6. To assemble: Spread mashed avocado on the bottom burger buns then top with a burger patty, sliced tomato and onions, and bacon. Crown with top bun and serve warm.
Storage
If stored in an airtight container in the refrigerator the burger patties will keep for up to four days and the bacon for up to five days. The mashed avocado is best enjoyed fresh, however, will keep for up to four days when stored in an airtight container in the refrigerator.
FAQ
The best way to determine if a burger is done is to use a kitchen thermometer to gauge the internal temperature of the center of the burger. For medium-rare the temp should be 130 to 135 degrees and for medium 140-145 degrees. Medium-well should be 150-155 degrees and well done 160-165 degrees.
Absolutely! Although you won’t end up will grill marks, you can cook these burgers in a skillet. For best results use cast iron as it conducts heat the best.
