They can even be prepped a day ahead of time.

  • Boursin cheese: In case you are not familiar with Boursin, it is a smooth and creamy seasoned cheese. There are several different varieties to choose from and you are more than welcome to experiment with them all. Personally, I stuck with the original flavor, Garlic & Fine Herbs.   • Cream cheese: Because Boursin cheese is so richly flavored, in an effort to not let it overwhelm the other flavors and because it is a bit pricey, you will combine it with cream cheese. You will need to soften it to room temp first so that it will easily combine with the Boursin and spread onto the tortillas with ease.
  • Large flour tortillas or wraps: You may use burrito-sized (10-inch) flour tortillas or wraps. There are an assortment of wrap flavors available these days, any of which would work for this recipe, so feel free to experiment! I chose to use the spinach herb variety.
  • Greens: You may use whichever type of greens you prefer or whichever you have on hand. I typically use either arugula or spinach. If you prefer the pinwheels to have a little more crunch, romaine lettuce would be a great choice.
  • Roasted red peppers: For a touch of sweetness. For more texture sub for raw red bell pepper.
  • Red onion: For crunch and zing!
  • Deli sliced roast beef: For best results, opt for a quality brand of roast beef straight from the deli rather than the pre-packaged store brand or Oscar Mayer stuff.

How to make Boursin roast beef pinwheels (+ tips)


1. Combine the Boursin and cream cheese in a bowl and set it aside.

2. Lay a tortilla/wrap on a flat surface and spread a third of the cheese mixture onto it. Sprinkle with a third of the greens, roasted red peppers, and red onions, then top with a third of the sliced roast beef. Repeat with remaining ingredients.

3. Roll shut as tightly as possible and refrigerate in a large storage bag or a container with a lid for at least one hour. If storing for an extended period of time, such as overnight, I find it best to tightly enclose the wraps in plastic wrap. This keeps the moisture out, preventing them from getting soggy.

4. Use a sharp knife to slice the ends off, then proceed to slice into approximately 10 pieces, about 1/2-inch wide. Serve.


Storage


Pinwheels will keep for up to three days if stored properly in the refrigerator. For best results, individually enclose the wraps tightly in plastic wrap prior to slicing. Once sliced, refrigerate in an airtight container or plastic/reusable storage bag.

Can I make pinwheels the day before?

Absolutely! In fact, I recommended it. Preparing pinwheels the day before allows plenty of time for the flavors to develop and meld.

  • 4 ounces cream cheese, softened to room temp
  • 3 large (10-inch) flour tortillas or wraps
  • 1/2 cup packed greens, arugula, spinach, or lettuce

This is a delicious combination of flavors. I used jarred roasted red bell peppers. Unfortunately, the juices from the peppers made the whole wraps soggy 😔 i will be using raw red bell pepper next time. Thanks for the great recipe.
