What you’ll love about this recipe

  • It’s a fun twist on a classic! While cheeseburgers will never grow old (at least not for me!) putting a unique spin on them does nothing but increase my adoration for them. I personally love reinventing classic recipes and since you’re here, I bet you do too. These bacon cheeseburger burritos take all the traditional cheeseburger ingredients and wrap ’em up in a flour tortilla rather than smooshing them between two buns; all the flavor but twice the fun!
  • It’s surprisingly simple! Believe it or not, preparing this dish is only slightly more difficult than preparing your standard cheeseburgers and only takes 20-minutes!!
  • It’s filling! Serve these bacon-wrapped burritos for lunch or dinner and that’s all you’ll need; trust me! They are loaded to the max with ground beef, cheese, tomato, onion, pickle, and lettuce and of course, wrapped in bacon.

Ingredients (+ notes & substitutions)

Ingredients for bacon cheeseburger burritos.
  • Ground beef
  • Garlic
  • Water: Cooking the ground beef in a little bit of water keeps it nice and tender which is ideal.
  • Worcestershire sauce: The use of Worcestershire is a simple way to add a lot of flavor to the ground beef and thus a go-to anytime I make burgers.
  • Ground black pepper: For seasoning the ground beef.
  • Kosher salt: Also for seasoning the ground beef.
  • Mayonnaise: The base of the burger sauce will be combined with the ground beef.
  • Ketchup: For the burger sauce as well.
  • Yellow mustard: Another ingredient in the burger sauce.
  • Dill pickles: I prefer to dice up some baby dill pickles because I like the extra crunch, however, you could easily use any variety of pickles or even dill pickle relish. If you’re into it, you could even use bread and butter pickles or sweet pickles.
  • Tomato: The tomato adds some freshness. I used one medium-sized Roma tomato but any variety will do.
  • White onion: Could sub for yellow onion or even red.
  • Large flour tortillas
  • American cheese: I opted for American cheese to keep it classic and because it just melts and integrates into the burritos so well. If you’re not a fan of American cheese you could certainly sub for whichever type you prefer.
  • Shredded lettuce: Not a fan of cooked lettuce? Yeah, typically I’m not either. BUT I found that it really actually works in these burritos. Feel free to leave it out if you so choose.
  • Bacon: Almost always I recommend thick-cut bacon but for this recipe, you’ll want to go with your standard cut bacon. These babies are already loaded and high in calories so no need for the extra. Additionally, the regular bacon cooks much faster and crisps up better.

4. In a medium bowl, combine the mayonnaise, ketchup, and mustard. Stir in the ground beef and set aside.

5. To assemble: In a line down the center of each tortilla, arrange four American cheese halves so that they are not overlapping or overlap very little. Top each with a third of the ground beef mixture. Sprinkle on two tablespoons of each of the following: onions, pickles, and tomato. Fold the opposite edges of the tortilla in slightly then roll it shut to form a burrito. Beginning at the seam side, wrap four slices of bacon around each burrito. I find that it’s easiest to lay the bacon slices out parallel to each other on a flat surface about half an inch apart, wrap the ends of the bacon over the top of the burrito then roll it until the bacon is fully wrapped around it.

Can they be cooked in the oven?

They absolutely can although it will take quite a bit longer to cook them using this method and the bacon tends to not crisp up as much. To bake: preheat your oven to 400 degrees, if you have a wire cooling rack place it atop your baking sheet – if not line it with tin foil or parchment paper, place the burritos on the baking sheet and bake for 30-40 minutes flipping halfway through.
