Blueberry Blondies

1. Line an 8x8-inch baking dish with parchment paper or liberally grease it with non-stick cooking spray and set it aside. 2. In a medium bowl, whisk the eggs then add the granulated sugar, light brown sugar, and vanilla and mix until fully combined.

3. Add the butter and whisk until well combined.

4. Add the all-purpose flour and salt and mix until just combined, then gently fold in the blueberries.

5. Transfer the batter to the prepared baking dish and bake for approximately 35-40 minutes until the edges are browned and a toothpick inserted into the middle comes out clean. Transfer to a wire cooling rack and allow to cool.

6. If you intend to frost the blondies, prepare the cream cheese frosting while they are cooling. Use a hand mixer to beat the butter and cream cheese until smooth and fully combined. Add the powdered sugar and vanilla extract and beat until fully combined. 7. Once cool, spread the cream cheese frosting evenly atop the blondies, then slice and serve.
