Beef Birria (Mexican Stew)

Excellent recipe! My children loved it I have been to Guadalajara and had Birria! This really compares to my sister in laws. Just need some Tejuino to wash it down!!     - Rachel

Boil the chiles, onions, and garlic.

Add the mixture plus the spices to your blender...

Pulse until smooth and combined. 

Add the chuck roast, chile sauce, water, bay leaves, and cinnamon stick to a pot.

Simmer for4-6 hours. 

Remove the chuck roast and shred it, then transfer back to pot. 

Simmer for another 1-2 hours. 

Serve w/ diced white onion, cilantro, and lime wedges. OR........

Make tacos..... 

and serve w/ consomé for dipping.

Birria ramen w/ quesadilla strips.
